What does it mean to go “straight” on the surface of a sphere?

Starting from your city, orient yourself so as to look towards the North and try to always go “straight” following a meridian. You can go all the way around, passing by the two poles and returning home. What happens to the direction indicated by the compass? Then try to do the same following a parallel (possibly moving your starting point a little closer to the poles if you live too close to the Equator): what happens in this case?
